Here are some books you should check out:

One Man's Wilderness: An Alaskan Odyssey, by Sam Keith and Richard Proenneke.
The written version of the awesome PBS documentary.

Plants of The Pacific Northwest Coast, by Jim Pojar and Andy Mackinnon.
Know colloquially among the nature nerds in Washington as the "Pojar". Good visual guide to the trees, shrubs, flowers, ferns, and mosses of the Pacific Northwest. I don't go anywhere without my Pojar.

The Herbal Medicine-Maker's Handbook: A Home Manual, by James Green.
I was initially dubious of this book, but the practical explanations of how to make salves, ointments tinctures and other herbal remedies won me over. Also has great discussions on the use of different herbs.

Uprisings: The Whole Grain Bakers' Book, by Michael Arthur, Kathy Gaskin, Lew Kidder, and Jean Marvel. The ultimate hippy book of whole grain, and unique baked goods. My copy is form the 80's and all gross and musty, but oh so informative.

Wild Fermentation: The Flavor, Nutrition, and Craft of Live-culture Foods, by Sandor Ellix Katz.
Breaks down the seemingly daunting world of fermented food and drink into easy to understand explanations and recipes. Fun for the kitchen experimentalist!
